Baked Mac & Cheese Cups

Baked Mac & Cheese Cups Recipe.


  • 1½ cups dried macaroni

  • 1 cup of flour

  • 1 medium onion , chopped

  • 1 clove garlic , chopped

  • 1 cup of coconut milk

  • 1 teaspoon salt

  • 1 teaspoon apple cider vinegar

  • panko breadcrumbs

  • vegan cheese


  • Prepare the muffin tin with liners and preheat oven to 350°F

  • Add the macaroni to a large pan of boiling water and cook as per the instructions

  • While the macaroni is cooking sauté the onion and garlic until just starting to turn golden brown.

  • Drain the macaroni and place back in the pot it was once cooking in.

  • Add the coconut milk to the pan where the onion and garlic are sautéing, once there are bubbles, add in the flour and vegan cheeses.

  • Once the flour is completely dissolved in the mixture, take off heat and pour into the macaroni pot, carefully stirring.

  • Add in 1 cup of panko breadcrumbs while stirring the macaroni

  • Start filling the muffin tins

  • Push down the tops a bit with the back of a spoon and top with more panko breadcrumbs

  • Place in oven and cook for 30 minutes.

  • Remove from the oven and leave to cool in the tin for about 20 minutes (this is where they form their shape so make sure to wait 20 minutes!)

  • Eat & Enjoy!
