VEGAN CHICKPEA "MEAT"BALLS.
In a food processor, add two cans of chickpeas (rinsed), 1 cup of spinach, 1 cup of kale, 1 cup of celery, 1/4 cup of breadcrumbs, 1/2 onion, & 1 clove of garlic. Preheat oven to 425 degrees.
After the ingredients are placed in the food processor, pour into a round bowl. Depending on the consistency of the ingredients after using the food processor, you may need to mash the chickpeas for a more sticky texture.
Start by taking a palm-full of the chickpea constancy and rolling it into a ball. Keep doing this until the bowl is empty. After each ball is made, place on a non-sticky pan.
After each ball is placed on the non-sticky pan, cover each ball with your favorite sauce. For this recipe I use "Rao's Homemade Marinara Sauce."
Place in the oven for 45 minutes, check on them every 15 minutes to make sure they don't burn.
