Preheat oven to 400 Degrees Fahrenheit.
Gather all ingredients:
- soft tortilla wraps
- black beans or red beans
- green beans
- white or yellow rice
- your choice of a vegan meat substitute
- your choice of vegan cheese
- red enchilada sauce
Take each tortilla wrap and place a spoonful of guacamole on one side. Gather the beans & green beans, tomatoes, rice, corn, & meat substitute in a bowl and mix together
After the ingredients are mixed together in a bowl, take two spoonfuls (or more depending on how big your tortilla wrap is) and place on top of the guacamole
After each tortilla wrap is filled, you can then top the ingredients with your favorite vegan cheese
Slowly wrap the tortilla, making sure that all ingredients stay inside and nothing is falling out. Gently place the tortilla on a non stick baking dish, once all tortillas a re wrapped and placed onto the baking dish, drizzle the enchilada sauce over each one.
Place in the oven for 30 minutes
