The biggest challenge being vegan is making time to meal prep for the week ahead. Especially if you have a busy schedule like me! I usually leave my house at 8am and don't arrive home until 8pm at night. Meal prepping saves my life and saves me a lot of time spent worrying about what meal I'm going to eat next! Below are some meal prep ideas that can help you get through the weeks ahead. Pro Tip: Carve out time on a Sunday Evening to prepare your food for the week!
Smoothies: place desired fruit for each smoothie you plan on making in a small container or bag and place in the freezer. Your fruit and veggies won't go bad and it will be easier and less time consuming when adding them to the blender early in the AM.
Overnight Oats: Luckily overnight oats last two-three days prior to making them. Just add your favorite type of oats and favorite type of plant milk to a small container and store in the fridge. You can eat these on the go during your busy mornings, or save them for when your at work.
Lunch: Salads. I can not stress this enough. Salads don't have to be boring! You can dress your salad up any way you'd like, add pasta if you want, add any vegetable you want, there are no rules here! You can prepare your salads on Sunday's and store them in your fridge for the week, taking them to work with you. Always remember to keep that dressing of your choice on the side. You don't want that salad getting soggy.
Snacks: I have a lot of snack recipes on the blog, from plantain chips to protein granola balls. Go check out some of your favorite snack recipes from Ophelia. You can store each snack in the fridge for the week too.
Dinner: I find it helpful to meal plan for the week when it comes to dinner. This way, you can chop up all your veggies in advance. If you want to make soup for the week, place the ingredients in a container, then when dinner time comes, pour it in a pot on simmer! I have a lot of bulk recipes on the blog as well, where you can choose from soups, pastas, tacos, salads, you can meal prep them all!
