
Power Bowls (V+GF)
Power Bowl Recipe.
What you will need:
1 can of chickpeas
Roasted sweet potatoes (cook before-hand)
1 can of beets
Olives
1 cucumber
2 whole Tomatoes or cherry tomatoes
1 red onion
1/2 cup of lemon juice
1 cup of quinoa (cook before-hand)
Hummus
Parsley
Salt
Pepper
Olive Oil

Steps:
Dice and place in a large bowl: cucumber, tomatoes, red onions, beets, and roasted sweet potatoes
Add olives, quinoa, and chickpeas to the bowl
Add the desired amount of olive oil, pepper, salt, parsley, and hummus
Add 1/2 cup of lemon juice
