Power Bowls (V+GF)

Power Bowl Recipe.


What you will need:

  • 1 can of chickpeas

  • Roasted sweet potatoes (cook before-hand)

  • 1 can of beets

  • Olives

  • 1 cucumber

  • 2 whole Tomatoes or cherry tomatoes

  • 1 red onion

  • 1/2 cup of lemon juice

  • 1 cup of quinoa (cook before-hand)

  • Hummus

  • Parsley

  • Salt

  • Pepper

  • Olive Oil



Steps:

  • Dice and place in a large bowl: cucumber, tomatoes, red onions, beets, and roasted sweet potatoes

  • Add olives, quinoa, and chickpeas to the bowl

  • Add the desired amount of olive oil, pepper, salt, parsley, and hummus

  • Add 1/2 cup of lemon juice
