Quesadillas

Quesadilla Recipe.

Ingredients:

  • 1/2 Onion (Chopped)

  • 1/2 tsp Garlic (Crushed)

  • 1 Tbsp Olive Oil

  • 1 Can Black Beans (Drained)

  • 1 Can of Corn (Drained)

  • Vegan Meat Substitutes (I use beyond meat)

  • Vegan Cheese

  • Guacamole


Steps:

  1. Add the chopped onion and crushed garlic to a frying pan with the olive oil. Sauté until the onions are golden. Add in the black beans and corn and sauté. Add in the beyond beat (optional).

  2. Heat up a frying pan (dry, no oil) and then add 1 tortilla to the pan. Add some of the mix to one side of the tortilla, topped with some guacamole and then some vegan cheese.

  3. Fold the tortilla over to close it. Pat down with your spatula so that the top sticks. Cook for a couple of minutes before flipping and cooking for a couple of minutes on the other side so that both sides are nicely browned and toasted.

  4. Remove from the pan and repeat with your other tortillas.

  5. Cut each quesadilla in half and enjoy!
