I made this recipe about a month ago and received so many positive messages from everyone, especially those demanding for the recipe! This sausage baked ziti is to die for, It's the perfect amount of pasta, sausage, & (in this case, eggplant marinara sauce, & vegan cheese). It's the best meal to make if you are having company over or If you need a cheat day. Everyone will absolutely love it, vegan or not!


- 1 Package of pasta (Any Kind)

- 1 Package of "Beyond Meat Sausage"

- 1 Jar of "Rao's Eggplant Marinara Sauce"

- 1 Package of "Vio Life Vegan Mozzarella Cheese"

- 1 Cup of Spinach

- 1 Cup of homemade breadcrumbs

- Olive Oil


1. Boil Water for the Pasta

2. While the water is boiling, start preparing your "Beyond Meat Sausages." They have a plastic film wrap around them, so make sure to remove that wrapping first, then chop up the sausages into pieces.

3. Pour pasta into the boiling water.

4. In a food chopper, chop 1 cup of spinach. Then add the cut up sausages as well as the chopped up spinach to a pan (heat on low).

5. Once the pasta is ready, drain and place back in the pot it was cooked in. Place back on stove top, and add the sausage + spinach mix to the pot of pasta.

6. Add the sauce. In this recipe I used "Rao's Eggplant Marinara Sauce," realistically you can use any sauce you prefer!

7. Once the sauce, pasta, sausage, and spinach are together in one pot, add two tablespoons of olive oil & mix all ingredients together! (You can add other spices at this time too).

8. Once the pasta is mixed together, even out in a long non-sticky pan.

9. This is where you can add as much cheese & breadcrumbs as you want! I used "Vio Life's Shredded Mozzarella Cheese," and 1 cup of homemade breadcrumbs.

10. Cover with aluminum foil and place in oven at 425 degrees for 45 minutes. Then, uncover and keep in oven for desired crispness on top.

11. Take out of oven and ENJOY!
