VEGAN TACOS. Enough said.

I find myself making tacos for lunch, dinner or both (cause why not), AT LEAST two-three times a week. They are so quick and easy to make AND you can fill them with so many yummy vegan options. I'm an "option-type-person" translated: I need to have at least three different options in front of me before I choose only one, ESPECIALLY when it comes to vegan food!


Today I'm going to share some of my top favorite taco fillings with you guys! No need to measure out the amount of ingredients, it's truly up to you to decide. Also, each filling will fit either a soft or hard shell.


1. THE LOADED TACO

* Vegan Chopped Meat: I either use Beyond Meat Burgers or I find vegan meatless meatballs from my local grocery store and mash them together.

* Avocados

* Tomatoes

* Black Beans

* Lettuce

* Brown Rice or Red Quinoa

* Onions & Garlic

* Hot Sauce


2. VEGGIE TACO

* Cauliflower Rice

* Black Beans

* Mushrooms

* Tomato

* Carrots

* Shredded Brussel Sprouts

* Spinach

* Avocados

* Onion & Garlic

* Hot Sauce

3. SPAGEHTTI TACO

* Spaghetti

* Marinara Sauce

* Beyond Meat Burgers (Crumbled)

* Onion & Garlic


4. SIMPLE TACO

* Your Choice of Vegan Meat

* Lettuce

* Tomato

* Peppers

* Avocado

* Hot Sauce


Personally, my top two favorites are the VEGGIE TACO & THE LOADED TACO with extra avocados and extra hot sauce. Make sure to add your own twist of favorite flavors & spices, (the limit does not exist). These four different ways to load a taco are equally delicious, have fun finding out which one you like best!
